Loaded Cauliflower Bake

Similar to classic macaroni cheese, this recipe is a bit lighter, and it contains bacon. Everything tastes better with bacon!


2 small cauliflower cut into florets3 cloves minced garlic
6 slices cooked, crumbled bacon
2tbsp butter
3tbsp all-purpose flour
50g softened cream cheese
2 cups whole milk
Salt and freshly ground pepper
11/2 cups grated cheddar cheese


  1. Preheat oven to 170°C. Blanch cauliflower for 3 minutes in a large saucepan of boiling water. Drain thoroughly.
  2. To make the cheese sauce, heat a large skillet and melt the butter. Add the garlic and cook for a minute before adding the flour, stirring to combine. Add the milk then bring to a gentle simmer before adding the cream cheese. Whisk thoroughly, remove from heat and stir in 1 cup of Cheddar. Season to taste.
  3. In a 20 x 32 cm dish, add the cauliflower and pour over the cheese sauce. Stir to mix before stirring in all but 1 tablespoon of green onions and cooked bacon. Top with remaining Cheddar, green onions and bacon.
  4. Cook for 30 minutes until cauliflower is tender and cheese is bubbling, melting and delicious.
